A quick and tasty Beef Taco Skillet recipe that combines ground beef, vegetables, and cheese for a delicious one-pan meal.

- 1 pound ground beef
- 1 medium onion, diced
- 1 bell pepper, diced (any color)
- 2 cloves garlic, minced
- 1 packet taco seasoning (about 1 ounce)
- 1 cup canned diced tomatoes (with juices)
- 1 cup corn (frozen or canned, drained)
- 1 cup black beans (canned, drained and rinsed)
- 1 cup shredded cheddar cheese
- 1 cup tortilla chips, crushed (for topping)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish, optional)
- Sour cream (for serving, optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
- Add the minced garlic and ground beef to the skillet. Cook until the beef is browned and cooked through, breaking it apart with a spatula, about 6-8 minutes. Drain excess fat if necessary.
- Stir in the taco seasoning, diced tomatoes, corn, and black beans. Mix well and let simmer for about 5 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
- Sprinkle the shredded cheddar cheese over the top of the mixture. Cover the skillet and let it cook for an additional 2-3 minutes, or until the cheese is melted.
- Remove from heat and top with crushed tortilla chips. Garnish with fresh cilantro if desired. Serve with sour cream on the side.
Notes
- For a spicier dish, add diced jalapeños or a pinch of cayenne pepper when cooking the beef.
- Swap the ground beef for ground turkey or chicken for a lighter option, or use a plant-based meat substitute for a vegetarian version.
