Ingredients

  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 cup corn (frozen or canned)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped (optional)
  • Tortilla chips or warm tortillas for serving

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  2. Add the diced onion and bell pepper to the skillet and sauté for about 3-4 minutes until they begin to soften.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the black beans, diced tomatoes, corn, chili powder, cumin, paprika, salt, and pepper. Stir well to combine and bring to a simmer. Cook for about 5-7 minutes, allowing the flavors to meld.
  5. Sprinkle the shredded cheddar cheese over the top and cover the skillet. Cook for another 2-3 minutes until the cheese is melted.
  6. Remove from heat and garnish with fresh cilantro if desired. Serve hot with tortilla chips or warm tortillas.

  • For a spicier kick, add diced jalapeños or a splash of hot sauce to the skillet.
