Boston Cream Pie Cookies are a delightful twist on the classic dessert, combining the flavors of chocolate and vanilla in a delicious cookie sandwich.

- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
- 1/2 cup vanilla pudding mix (instant)
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chocolate chips.
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- While the cookies cool, prepare the vanilla pudding by whisking together the pudding mix and milk in a bowl until thickened.
- Once the cookies are cool, spread a layer of vanilla pudding on the bottom of half the cookies and top with the remaining cookies to create sandwiches.
- Melt additional chocolate chips in the microwave or over a double boiler and drizzle over the top of the cookie sandwiches.
- Allow the chocolate to set before serving.
Notes
- For a richer flavor, try adding a teaspoon of espresso powder to the cookie dough.
- You can also substitute the vanilla pudding with chocolate pudding for a double chocolate experience.
