Description

Delicious and easy-to-make cookies using brownie mix, perfect for a quick treat.

Ingredients

Scale
  • 1 box (18.3 oz) brownie mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped nuts (optional)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the brownie mix, vegetable oil, eggs, vanilla extract, and salt. Stir until well blended.
  3. If desired, fold in the chocolate chips and chopped nuts for added texture and flavor.
  4. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops look slightly cracked. Be careful not to overbake.
  6. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a minty twist, add 1/2 teaspoon of peppermint extract to the dough.
  • Substitute half of the vegetable oil with applesauce for a lighter version.
