Brownie-Stuffed Chocolate Chip Cookies are irresistible!
Ingredients

- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups semi-sweet chocolate chips
- 1 batch of brownie batter (store-bought or homemade, about 2 cups)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until smooth and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.
- Scoop about 2 tablespoons of cookie dough and flatten it in your palm. Place about 1 tablespoon of brownie batter in the center and fold the cookie dough around it, sealing it completely.
- Place the stuffed cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are golden brown. The centers may look slightly underbaked; they will continue to cook as they cool.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a richer flavor, try adding a pinch of espresso powder to the cookie dough.
- You can substitute the semi-sweet chocolate chips with milk chocolate or dark chocolate chips for a different taste.
