Description

A delicious and hearty breakfast dish featuring scrambled eggs, diced potatoes, and melted cheddar cheese.

Ingredients

Scale
  • 2 cups diced potatoes
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (any color)
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.
  2. Add the diced onion and bell pepper to the skillet. Cook for an additional 5 minutes until the vegetables are softened.
  3. In a bowl, whisk together the eggs, salt, pepper, garlic powder, and paprika.
  4. Pour the egg mixture over the cooked potatoes and vegetables in the skillet. Gently stir to combine and cook for about 3-4 minutes, or until the eggs are just set.
  5. Sprinkle the shredded cheddar cheese over the top and cover the skillet with a lid. Allow it to sit for 1-2 minutes until the cheese is melted.
  6. Remove from heat and garnish with fresh parsley if desired. Serve immediately.

Notes

  • For a spicier kick, add diced jalapeños or a dash of hot sauce to the egg mixture.
  • Substitute the cheddar cheese with feta or pepper jack for a different flavor profile.
