Description

A simple and delightful recipe for Classic Irish Tea Cake, perfect for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup raisins or currants (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
  4. In a separate bowl, beat the eggs, then add the milk, vanilla extract, and almond extract. Mix well.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in the raisins or currants.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  9. Once cooled, dust the top with powdered sugar if desired before serving.

Notes

  • For a citrus twist, add the zest of one lemon or orange to the batter.
  • Substitute half of the all-purpose flour with whole wheat flour for added nutrition and a nuttier flavor.
