- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup cookie butter
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup buttermilk
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter, cookie butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the flour mixture, mixing until just combined.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For a richer flavor, add ½ cup of chocolate chips to the batter before baking.
- To make a cream cheese frosting, beat together 8 oz of cream cheese, ½ cup of butter, 2 cups of powdered sugar, and 1 teaspoon of vanilla extract until smooth, then frost the cooled cake.
