- 8 ounces penne pasta
- 1 tablespoon olive oil
- 1 pound chicken sausage, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes.
- Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is translucent.
- Stir in the bell pepper, zucchini, and cherry tomatoes. Cook for an additional 5-7 minutes until the vegetables are tender.
- Add the cooked pasta to the skillet along with the dried oregano, dried basil, salt, and pepper. Toss everything together until well combined and heated through.
- Remove from heat and sprinkle with grated Parmesan cheese. Toss again to combine.
- Serve warm, garnished with fresh basil leaves if desired.
Notes
- For a vegetarian option, substitute chicken sausage with plant-based sausage or omit it entirely and add more vegetables.
- Feel free to customize the veggies based on what you have on hand, such as spinach, asparagus, or carrots for added flavor and nutrition.
