  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes.
  3. Add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is translucent.
  4. Stir in the bell pepper, zucchini, and cherry tomatoes. Cook for an additional 5-7 minutes until the vegetables are tender.
  5. Add the cooked pasta to the skillet along with the dried oregano, dried basil, salt, and pepper. Toss everything together until well combined and heated through.
  6. Remove from heat and sprinkle with grated Parmesan cheese. Toss again to combine.
  7. Serve warm, garnished with fresh basil leaves if desired.
