Description

A delicious recipe for Fig and Cream Cheese Bars that combines the sweetness of figs with creamy cheese for a delightful treat.

Ingredients

Scale
  • 1 cup dried figs, chopped
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  2. In a small bowl, combine the chopped figs with 1/4 cup of hot water. Let them soak for about 10 minutes to soften, then drain and set aside.
  3. In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth and creamy. Add the vanilla extract and cinnamon, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the cream cheese mixture, mixing until just combined.
  5. Stir in the melted butter, egg, and soaked figs (and walnuts if using) until fully incorporated.
  6. Pour the batter into the prepared baking dish, spreading it evenly. Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Cut into squares and serve.

Notes

  • For a touch of sweetness, drizzle honey or maple syrup over the bars before serving.
  • Substitute dried figs with other dried fruits like apricots or cranberries for a different flavor profile.
