Description

Fruity Pebbles Cheesecake Tacos are a delightful dessert that combines the flavors of cheesecake with the fun crunch of Fruity Pebbles cereal, all wrapped in a taco shell made from the cereal itself.

Ingredients

Scale
  • 1 ½ cups crushed Fruity Pebbles cereal
  • ½ cup unsalted butter, melted
  • 1 (8-ounce) package cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping (like Cool Whip)
  • 1 cup mini marshmallows
  • ½ cup diced strawberries
  • ½ cup diced bananas
  • ½ cup diced kiwi
  • 1 tablespoon rainbow sprinkles
  • 8 small flour tortillas

Instructions

  1. Preheat your oven to 350°F.
  2. In a mixing bowl, combine the crushed Fruity Pebbles and melted butter. Mix until the cereal is evenly coated.
  3. Press the mixture into the bottom and up the sides of a muffin tin to form taco shells.
  4. Bake for 10 minutes, then let cool completely.
  5. In a separate bowl, beat the softened cream cheese until smooth.
  6. Add the powdered sugar and vanilla extract, mixing until well combined.
  7. Gently fold in the whipped topping, mini marshmallows, strawberries, bananas, and kiwi.
  8. Once the taco shells are cool, fill each shell with the cheesecake mixture.
  9. Top with additional diced fruit and rainbow sprinkles.
  10. Chill the filled tacos in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For a fun twist, try using different flavored cereals like Cocoa Pebbles or Cinnamon Toast Crunch.
  • You can also substitute the fresh fruit with your favorite berries or other seasonal fruits for variety.
