Description

A flavorful grilled chicken dish marinated in a vibrant chimichurri sauce made with fresh herbs and garlic.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a medium bowl, combine the parsley, cilantro, red wine vinegar, olive oil, garlic, red pepper flakes, salt, and black pepper. Mix well to create the chimichurri sauce.
  3. Reserve about 1/4 cup of the chimichurri sauce for serving.
  4. Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the remaining chimichurri sauce over the chicken, ensuring it is well coated. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  5. Remove the chicken from the marinade and let any excess drip off. Discard the used marinade.
  6. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F.
  7. Remove the chicken from the grill and let it rest for 5 minutes.
  8. Serve the grilled chicken with the reserved chimichurri sauce drizzled on top.

Notes

  • For a spicier kick, add more red pepper flakes to the chimichurri sauce.
  • Serve the chicken with grilled vegetables or over a bed of rice for a complete meal.
