- 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup unsalted butter, melted
- 1 tablespoon minced garlic
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh cilantro, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional for heat)
- Skewers (wooden or metal)
Instructions
- In a bowl, combine melted butter, minced garlic, parsley, chives, cilantro, smoked paprika, onion powder, salt, black pepper, and cayenne pepper. Mix well to create the cowboy butter marinade.
- Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
Notes
- For added flavor, try marinating the chicken overnight.
- You can substitute chicken thighs with chicken breast for a leaner option.
- Add bell peppers and onions to the skewers for extra veggies.
