Description

Grilled Lime Salmon with Mango Avocado Salsa is a delicious and healthy dish that combines the flavors of grilled salmon with a refreshing mango avocado salsa.


Ingredients

  • 2 salmon fillets (6 ounces each)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1 ripe avocado, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon fresh lime juice (for salsa)
  • Salt to taste (for salsa)

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, whisk together olive oil, lime juice, lime zest, garlic powder, paprika, salt, and pepper.
  3. Brush the mixture over both sides of the salmon fillets.
  4. Place the salmon on the grill skin-side down.
  5. Grill for about 4-5 minutes on each side, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F.
  6. While the salmon is grilling, prepare the salsa by combining diced mango, avocado, red onion, cilantro, lime juice, and salt in a medium bowl. Gently toss to combine.
  7. Once the salmon is cooked, remove it from the grill and let it rest for a couple of minutes.
  8. Serve the salmon topped with the mango avocado salsa.

Notes

  • For a spicier salsa, add diced jalapeño to the mango avocado mixture.
  • Serve with a side of quinoa or brown rice for a complete meal.
