- 2 salmon fillets (6 ounces each)
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon fresh lime juice (for salsa)
- Salt to taste (for salsa)
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, whisk together olive oil, lime juice, lime zest, garlic powder, paprika, salt, and pepper.
- Brush the mixture over both sides of the salmon fillets.
- Place the salmon on the grill skin-side down.
- Grill for about 4-5 minutes on each side, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F.
- While the salmon is grilling, prepare the salsa by combining diced mango, avocado, red onion, cilantro, lime juice, and salt in a medium bowl. Gently toss to combine.
- Once the salmon is cooked, remove it from the grill and let it rest for a couple of minutes.
- Serve the salmon topped with the mango avocado salsa.
Notes
- For a spicier salsa, add diced jalapeño to the mango avocado mixture.
- Serve with a side of quinoa or brown rice for a complete meal.
