- 2 pounds chicken thighs, bone-in and skin-on
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1/4 cup apple cider vinegar
- 1/4 cup chicken broth
- 2 bay leaves
- 1 tablespoon brown sugar
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large skillet or Dutch oven, heat the vegetable oil over medium-high heat. Add the chicken thighs, skin side down, and sear until golden brown, about 5-7 minutes. Flip and cook for another 5 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
- Add the ground cumin, dried oregano, smoked paprika, chili powder, salt, and black pepper to the skillet. Stir well to combine and cook for 1-2 minutes until fragrant.
- Pour in the diced tomatoes (with their juice), apple cider vinegar, chicken broth, and add the bay leaves. Stir to combine.
- Return the chicken thighs to the skillet, nestling them into the sauce. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 30-35 minutes, or until the chicken is cooked through and tender.
- Remove the chicken from the skillet and set aside. Increase the heat to medium-high and simmer the sauce uncovered for an additional 10 minutes to thicken slightly. Stir in the brown sugar and adjust seasoning if necessary.
- Serve the chicken topped with the sauce, garnished with fresh cilantro and lime wedges on the side.
Notes
- For a spicier version, add diced jalapeños or a teaspoon of cayenne pepper to the sauce.
- Serve with rice or tortillas to soak up the delicious sauce, or add black beans for a heartier meal.
