Description

A flavorful Mexican Chicken Adobo recipe featuring tender chicken thighs simmered in a rich, spiced sauce.


Ingredients

  • 2 pounds chicken thighs, bone-in and skin-on
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1/4 cup apple cider vinegar
  • 1/4 cup chicken broth
  • 2 bay leaves
  • 1 tablespoon brown sugar
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large skillet or Dutch oven, heat the vegetable oil over medium-high heat. Add the chicken thighs, skin side down, and sear until golden brown, about 5-7 minutes. Flip and cook for another 5 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
  3. Add the ground cumin, dried oregano, smoked paprika, chili powder, salt, and black pepper to the skillet. Stir well to combine and cook for 1-2 minutes until fragrant.
  4. Pour in the diced tomatoes (with their juice), apple cider vinegar, chicken broth, and add the bay leaves. Stir to combine.
  5. Return the chicken thighs to the skillet, nestling them into the sauce. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 30-35 minutes, or until the chicken is cooked through and tender.
  6. Remove the chicken from the skillet and set aside. Increase the heat to medium-high and simmer the sauce uncovered for an additional 10 minutes to thicken slightly. Stir in the brown sugar and adjust seasoning if necessary.
  7. Serve the chicken topped with the sauce, garnished with fresh cilantro and lime wedges on the side.

Notes

  • For a spicier version, add diced jalapeños or a teaspoon of cayenne pepper to the sauce.
  • Serve with rice or tortillas to soak up the delicious sauce, or add black beans for a heartier meal.
