Description

Mini Fruit Pizzas are delightful, easy-to-make desserts topped with a creamy layer and fresh fruits.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup assorted fresh fruits (strawberries, blueberries, kiwi, etc.)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, combine flour, granulated sugar, baking powder, and salt.
  3. In another bowl, cream together the softened butter, egg, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Scoop tablespoon-sized portions of the dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  6. Flatten each scoop slightly with your fingers.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Remove from the oven and let cool completely.
  9. In a separate bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  10. Once the cookie bases are cool, spread a layer of the cream cheese mixture on each cookie.
  11. Arrange the assorted fresh fruits on top of the cream cheese layer.
  12. Drizzle with lemon juice to enhance flavor and prevent browning.
  13. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

  • For a fun twist, try using different flavored yogurt instead of cream cheese for a lighter topping.
  • Customize the fruit toppings based on seasonal availability or personal preference, such as using peaches or raspberries.
