- 2 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the potatoes thoroughly. Pat them dry with a paper towel.
- Pierce each potato several times with a fork to allow steam to escape during baking.
- In a small bowl, mix together the olive oil, garlic powder, onion powder, paprika, salt, and black pepper.
- Rub the olive oil mixture all over the potatoes, ensuring they are well coated.
- Place the potatoes directly on the oven rack or on a baking sheet lined with parchment paper. Bake for 45-60 minutes, or until the potatoes are tender and the skins are crispy.
- Remove the potatoes from the oven and sprinkle the grated Parmesan cheese evenly over the top of each potato. Return them to the oven for an additional 5-10 minutes, or until the cheese is melted and golden.
- Remove from the oven, let cool for a few minutes, and garnish with chopped fresh parsley if desired.

- For extra flavor, try adding a sprinkle of your favorite herbs, such as rosemary or thyme, to the olive oil mixture.
