- 2 pounds bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper (optional for heat)
- Juice of 2 limes
- 1/4 cup fresh cilantro, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, cumin, oregano, cayenne pepper, and lime juice. Mix well to create a marinade.
- Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let them marinate for at least 30 minutes at room temperature, or refrigerate for up to 4 hours for more flavor.
- Place the marinated chicken thighs on a baking sheet lined with parchment paper, skin side up.
- Roast in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.
- Remove from the oven and let the chicken rest for 5 minutes. Garnish with chopped cilantro before serving.
Notes
- For a smoky flavor, grill the chicken instead of roasting it.
- Serve with a side of rice and black beans for a complete meal.
