Description

A simple and delicious slow cooker recipe for beef and broccoli, perfect for a weeknight dinner.

Ingredients

Scale
  • 1 pound flank steak, sliced thin against the grain
  • 2 cups broccoli florets
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon sesame oil
  • 1/2 cup beef broth
  • 1 teaspoon red pepper flakes (optional)
  • Cooked white rice, for serving

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, cornstarch, minced garlic, minced ginger, sesame oil, beef broth, and red pepper flakes (if using).
  2. Place the sliced flank steak in the slow cooker and pour the sauce mixture over the meat. Stir to coat the beef evenly.
  3. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the beef is tender.
  4. About 30 minutes before serving, add the broccoli florets to the slow cooker, stirring to combine with the beef and sauce.
  5. Once cooked, serve the beef and broccoli over cooked white rice.

Notes

  • For a thicker sauce, mix an additional tablespoon of cornstarch with a little water and stir it into the slow cooker during the last 30 minutes of cooking.
  • Substitute the flank steak with chicken breast or tofu for a different protein option. Adjust cooking times accordingly.
