A delicious and spicy Korean ground beef dish served with a refreshing cucumber salad.

- 1 pound ground beef
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon brown sugar or sugar substitute
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 1 teaspoon rice vinegar
- 1/2 teaspoon black pepper
- 1 cucumber, thinly sliced
- 1/4 cup green onions, chopped
- 1 tablespoon sesame seeds
Instructions
- In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the soy sauce, sesame oil, gochujang, brown sugar, garlic, ginger, rice vinegar, and black pepper. Cook for an additional 3-5 minutes, allowing the flavors to meld.
- While the beef is cooking, prepare the cucumber salad. In a bowl, combine the sliced cucumber, green onions, and sesame seeds. Toss gently to mix.
- Serve the spicy ground beef over a bed of cucumber salad. Garnish with additional sesame seeds if desired.
Notes
- For a milder version, reduce the amount of gochujang or omit it entirely.
- Try adding shredded carrots or bell peppers to the ground beef mixture for extra veggies and flavor.
