Taco Tortilla Roll-Ups are a quick and delicious snack perfect for parties or a light meal.

- 8 large flour tortillas
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled ground beef or turkey
- 1 cup shredded lettuce
- 1 medium tomato, diced
- 1/2 cup salsa
- 1 teaspoon taco seasoning
- 1/4 cup sliced black olives (optional)
- Fresh cilantro for garnish (optional)
Instructions
- In a medium bowl, mix the softened cream cheese, shredded cheddar cheese, taco seasoning, and salsa until well combined.
- Lay a tortilla flat on a clean surface. Spread a generous layer of the cheese mixture over the entire tortilla, leaving a small border around the edges.
- Evenly distribute the cooked ground beef or turkey, shredded lettuce, diced tomato, and black olives (if using) over the cheese mixture.
- Starting from one end, carefully roll the tortilla tightly to form a log. Repeat with the remaining tortillas and filling.
- Once all tortillas are rolled, wrap each roll-up in plastic wrap and refrigerate for at least 30 minutes to firm up.
- After chilling, remove the plastic wrap and slice each roll-up into 1-inch pieces. Arrange on a serving platter and garnish with fresh cilantro if desired.
Notes
- For a vegetarian option, substitute the ground meat with black beans or additional veggies.
