  • 1 cup frozen pineapple chunks
  • 1 cup frozen mango chunks
  • 1 ripe banana sliced
  • 1 cup coconut milk
  • 1/2 cup orange juice
  • 1 tablespoon honey optional
  • 1/2 teaspoon vanilla extract
  • 1/4 cup shredded coconut for garnish
  • Fresh mint leaves for garnish

Method
 

  1. In a blender, combine the frozen pineapple, frozen mango, sliced banana, coconut milk, orange juice, honey (if using), and vanilla extract.
  2. Blend on high speed until smooth and creamy, about 30-60 seconds. If the smoothie is too thick, add a little more coconut milk or orange juice to reach your desired consistency.
  3. Taste the smoothie and adjust sweetness if necessary by adding more honey.
  4. Pour the smoothie into glasses and top with shredded coconut and fresh mint leaves for garnish.
