For the Sauce
  • 8 ounces Unsalted Streaky Bacon Guanciale or pancetta may be used.
  • 14 ounces Chopped Tomatoes San Marzano tomatoes are recommended.
  • 2 medium Onions Finely chopped.
  • ½ teaspoon Chili Flakes Adjust to taste.
  • ½ teaspoon Dried Oregano Use fresh for more flavor.
  • ¼ cup Red Wine White wine can be substituted or omitted.
  • 1 ounce Butter Can use vegan alternatives.
  • 1 tablespoon Parmesan Cheese Pecorino Romano is a sharper alternative.

Method
 

Step‑by‑Step Instructions
  1. Heat 2 tablespoons of olive oil in a large frying pan over medium heat for 1-2 minutes.
  2. Add 8 ounces of chopped unsalted streaky bacon to the pan, cooking for about 5 minutes until crispy.
  3. Stir in 2 finely chopped onions and ½ teaspoon of chili flakes, cooking for 15 minutes until onions are soft.
  4. Add 14 ounces of chopped tomatoes, ¼ cup of red wine, and ½ teaspoon of dried oregano. Bring to a boil for 2-3 minutes then simmer for 10 minutes.
  5. Cook 6 ounces of rigatoni or penne in salted boiling water for 8-10 minutes until al dente.
  6. Drain pasta and return to the pot. Pour over the sauce and stir in 1 ounce of butter until melted.
  7. Serve immediately, garnishing with freshly ground black pepper and 1 tablespoon of grated Parmesan cheese.
