Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, cook chopped bacon until crispy, about 5 minutes. Remove and set aside.
  3. Using the same skillet, add thinly sliced onions and cook over medium heat for about 15 minutes. Stir in brown sugar and balsamic vinegar, cooking for another 5 minutes until caramelized.
  4. Place the brie wheel on the lined baking sheet and lightly score the top in a crisscross pattern.
  5. Spoon caramelized onions over the brie, then sprinkle bacon and thyme on top.
  6. Bake for approximately 15 minutes until the cheese is gooey and golden brown.
  7. Let rest for a few minutes before serving with crackers or baguette slices.
