- Preheat your oven to 325°F (163°C).
- Grease four ramekins or one medium baking dish generously with butter or olive oil.
- In a medium mixing bowl, crack the eggs and whisk them together until fully combined. Gradually add in the whole milk and heavy cream, mixing until smooth.
- Gently fold in your choice of cheese and fresh herbs into the egg mixture.
- Pour the custard mixture evenly into the prepared ramekins, filling them about three-quarters full.
- Place the filled ramekins in a deep baking pan and carefully pour hot water into the pan until halfway up the sides of the ramekins.
- Transfer the baking pan to the preheated oven and bake for 30–35 minutes for ramekins or 35–40 minutes for a larger dish.
- Once baked, remove the custard from the oven and let it rest for about 5 minutes before serving.
