Preheat your oven to 400°F. Line a baking sheet with parchment paper.
In a shallow bowl, combine panko breadcrumbs, garlic powder, paprika, salt, and black pepper. In another bowl, place the flour. In a third bowl, add the beaten eggs.
Coat each piece of salmon first in flour, then dip it into the beaten eggs, and finally coat it with the panko mixture. Place the coated salmon bites on the prepared baking sheet.
Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the coating is golden brown.
While the salmon is baking, prepare the bang bang sauce by mixing mayonnaise, sweet chili sauce, sriracha, and lime juice in a small bowl.
Once the salmon bites are done, remove them from the oven and let them cool for a couple of minutes. Serve with the bang bang sauce drizzled on top or on the side for dipping. Garnish with chopped green onions.
