- In a mixing bowl or jar, add 1 cup of old-fashioned rolled oats, 1 cup of plant milk, and 1/2 cup of coconut yogurt. Stir in 2 tablespoons of chia seeds, 1 tablespoon of maple syrup or raw honey, the juice of 1/2 lemon, and 1 teaspoon of vanilla extract. Mix well until incorporated.
- Cover the bowl or jar tightly and refrigerate for at least 6–8 hours, preferably overnight.
- In a small saucepan, combine 1 cup of fresh blueberries, 1 tablespoon of chia seeds, 1 tablespoon of maple syrup, the juice of 1/2 lemon, and 1 teaspoon of vanilla extract. Simmer for about 10 minutes until thick.
- Remove the oats from the refrigerator, stir, and spoon into serving bowls. Drizzle with blueberry chia compote and sprinkle with granola. Optional: finish with grated lemon zest.
