Ingredients
  

  • 1 cup fresh blueberries
  • 2 tablespoons fresh thyme leaves plus extra for garnish
  • 2 ounces gin
  • 1 ounce fresh lemon juice
  • 1 ounce simple syrup 1 part water, 1 part sugar
  • Club soda
  • Ice cubes

Method
 

  1. In a cocktail shaker, muddle the fresh blueberries and thyme leaves together until the blueberries are crushed and juicy.
  2. Add the gin, lemon juice, and simple syrup to the shaker. Fill the shaker with ice cubes and shake vigorously for about 15 seconds.
  3. Strain the mixture into a glass filled with ice.
  4. Top off the drink with club soda to your desired fizz level.
  5. Garnish with a sprig of thyme and a few whole blueberries.
