Ingredients
  

  • 4 cups frozen French fries
  • 1 cup cheese curds
  • 1 cup cooked breakfast sausage crumbled
  • 4 large eggs
  • 1 tablespoon white vinegar
  • Salt and pepper to taste
For the Hollandaise Sauce:
  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter melted
  • Salt to taste

Method
 

  1. Preheat the oven and cook the frozen French fries according to package instructions until crispy and golden brown.
  2. While the fries are baking, prepare the Hollandaise sauce. In a heatproof bowl, whisk together the egg yolks and lemon juice until pale and frothy.
  3. Place the bowl over a pot of simmering water (double boiler method) and slowly drizzle in the melted butter while whisking continuously until the sauce thickens. Season with salt to taste. Remove from heat and set aside.
  4. In a skillet, cook the crumbled breakfast sausage over medium heat until browned and heated through. Set aside.
  5. In a separate pot, bring water to a gentle simmer and add the white vinegar. Crack the eggs into individual small bowls, then gently slide them into the simmering water. Poach the eggs for about 3-4 minutes until the whites are set but the yolks remain runny. Remove with a slotted spoon and drain on paper towels.
  6. To assemble, place a generous portion of crispy fries on each plate. Top with crumbled sausage, cheese curds, and a poached egg. Drizzle with Hollandaise sauce and season with salt and pepper to taste.
  7. Serve immediately and enjoy your delicious breakfast poutine!
