Ingredients
  

  • 2 cups cooked chicken shredded
  • 1/2 cup celery diced
  • 1/2 cup carrots shredded
  • 1/4 cup red onion finely chopped
  • 1/2 cup ranch dressing
  • 1/4 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups mixed greens such as romaine, spinach, or arugula
  • 1/2 cup blue cheese crumbles optional

Method
 

  1. In a large mixing bowl, combine the shredded chicken, diced celery, shredded carrots, and chopped red onion.
  2. In a separate small bowl, whisk together the ranch dressing, buffalo sauce, olive oil, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing mixture over the chicken and vegetable mixture, stirring until everything is evenly coated.
  4. Serve the buffalo chicken mixture over a bed of mixed greens.
  5. If desired, sprinkle blue cheese crumbles on top before serving.
