Step-by-Step Instructions
  1. Soak the mixed fruit with warmed brandy for at least 1 hour or overnight to create a flavorful base.
  2. Melt unsalted butter over medium heat until golden foam appears, then stir in remaining brandy and simmer until thickened.
  3. Combine softened vanilla ice cream, soaked fruit mixture, and cooled butter in a large bowl without overmixing.
  4. Transfer mixture to a greased 1.5L pudding dish, cover, and freeze for 2-3 hours or overnight.
  5. Make the toffee by combining caster sugar and a splash of water, stirring constantly until golden brown, then pour onto baking paper to cool.
  6. Unmold the pudding by dipping the dish in warm water, inverting it, and breaking cooled toffee shards to sprinkle on top before serving.
