Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine softened butter, brown sugar, and regular sugar and beat until light and fluffy.
  3. Add the eggs, one at a time, and mix in the vanilla until fully combined.
  4. In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Gently fold in the chocolate chips, butterscotch chips, coconut, and optional nuts.
  7. Drop spoonfuls of cookie dough onto the prepared baking sheets, spaced 2 inches apart.
  8. Sprinkle a light pinch of sea salt over each dough ball.
  9. Bake for 10-12 minutes, until the edges are lightly golden and centers are soft.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
