  • 1 cup unsalted butter softened, not melted
  • 1/2 cup powdered sugar plus more for dusting
  • 2 cups all-purpose flour or gluten-free blend
  • 1 cup finely chopped pecans can swap with walnuts or almonds
  • 1 teaspoon vanilla extract or almond extract for a twist
  • 1 pinch salt omit if using salted butter

Method
 

Directions
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add a pinch of salt and vanilla extract, then gradually mix in the flour and chopped pecans until a soft dough forms.
  4. Roll tablespoon-sized portions of the dough into balls and place them 2 inches apart on the baking sheet.
  5. Bake in the preheated oven for 8-10 minutes until the bottoms are lightly golden.
  6. Let the cookies cool on the sheet for 5 minutes, then roll in powdered sugar.
  7. Allow cookies to cool completely, then dust with powdered sugar again for an extra sweet finish.
