- Begin by measuring 6 cups of Rice Chex cereal and placing it in a large mixing bowl.
- Take a handful of dried apple chips and place them in a ziplock bag. Using a rolling pin, gently crush the apple chips until they form small, bite-sized bits.
- In a microwave-safe bowl, combine 1 cup of white chocolate chips, 1 cup of caramel bits, and 2 tablespoons of butter. Microwave this mixture in 30-second intervals, stirring in between until fully melted.
- Once the coating is smooth and melted, carefully pour it over the Rice Chex in the mixing bowl. Gently fold the cereal to evenly coat it.
- In a separate ziplock bag, combine 1 cup of powdered sugar, 1/2 cup of granulated sugar, and 1 teaspoon of apple pie spice. Add the coated cereal to the bag, seal tightly, and shake vigorously.
- Spread the coated cereal mixture evenly onto a lined baking sheet and add any remaining crushed apple chips on top. Allow it to cool for 10-15 minutes.
- Once set, break it into clusters of bite-sized pieces and transfer them to a serving bowl or an airtight container.
