Method
 

Dough Preparation
  1. In a large bowl, combine warm water, instant yeast, and sugar. Let sit for 5 minutes until frothy.
  2. In another bowl, mix all-purpose flour and salt. Pour the yeast mixture into the flour to form a smooth dough.
Kneading and Rising
  1. Knead the dough for 8 minutes by hand or 5 minutes with a mixer until smooth.
  2. Fold in chopped rosemary and grated Parmesan. Place in a greased bowl, cover, and let rise for 1 hour.
Shaping
  1. Divide the risen dough into 8 pieces, flatten slightly, and place a cube of mozzarella in the center.
  2. Fold dough over cheese, seal well, and shape into pretzels.
Boiling and Baking
  1. Bring water to a boil, add baking soda, and boil each pretzel for 30 seconds.
  2. Preheat oven to 425°F. Brush pretzels with melted butter, sprinkle with salt, and bake for 12-15 minutes until golden.
