Ingredients
  

  • 2 cups corn kernels fresh, frozen, or canned
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • Fresh parsley for garnish optional

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
  3. Add the ground beef to the skillet and cook until browned. Stir in the paprika, cumin, salt, and black pepper. Cook for another 2-3 minutes, then remove from heat.
  4. In a blender or food processor, combine the corn kernels and milk. Blend until smooth.
  5. In a large bowl, mix the blended corn with the cooked beef mixture. Stir in the shredded cheddar cheese and eggs until well combined.
  6. Gradually add the breadcrumbs to the mixture, stirring until it reaches a thick consistency.
  7. Pour the mixture into a greased 9-inch pie dish or baking dish, spreading it evenly.
  8. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and set.
  9. Let it cool for about 10 minutes before slicing. Garnish with fresh parsley if desired.
