  • 1 medium Onion chopped
  • 2 medium Carrots diced
  • 2 stalks Celery diced
  • 3 cloves Garlic minced
  • 14.5 oz Diced Tomatoes canned, with juice
For Seasoning
  • 1 tsp Cumin
  • 1 leaf Bay Leaf
  • Salt to taste
  • Pepper to taste
For Cooking
  • 2 tbsp Olive Oil for sautéing
For Garnishing
  • Fresh Parsley chopped

Instructions
  1. Rinse the lentils under cold running water in a fine-mesh strainer and set aside.
  2. In a large pot, heat olive oil over medium heat and sauté the onion for 4-5 minutes until golden.
  3. Add diced carrots, diced celery, and minced garlic, sautéing for another 3-4 minutes.
  4. Stir in cumin, salt, and pepper, and mix well, toasting the spices for about 1 minute.
  5. Add rinsed lentils and diced tomatoes to the pot, mixing everything together.
  6. Pour in vegetable broth and toss in the bay leaf, bringing to a boil before reducing heat to low.
  7. Simmer uncovered for 20-25 minutes until lentils are tender; stir occasionally.
  8. Remove bay leaf, adjust seasoning, and garnish with freshly chopped parsley before serving.
