  • 1 tsp Black Pepper freshly cracked
For the Broth & Rice
  • 6 cups Chicken Broth or vegetable broth
  • 1 cup Long-Grain Rice or jasmine rice
For Finishing Touches
  • 1 Juice of 1 Lemon or lime juice
  • to taste Fresh Parsley for garnish, cilantro can substitute

Step-by-Step Instructions
  1. Cut the chicken breasts into bite-sized pieces for even cooking.
  2. Heat olive oil in a large pot over medium heat until shimmering.
  3. Sauté the diced onion for about 5 minutes until translucent, then add garlic and ginger, cooking for 1 minute until fragrant.
  4. Stir in turmeric, salt, and black pepper, letting the spices toast for 30 seconds.
  5. Add chopped carrots and celery, sautéing for 3-4 minutes until softened.
  6. Introduce the chicken pieces, cooking for 5 minutes until no longer pink.
  7. Gradually stir in chicken broth and bring to a gentle boil.
  8. Reduce heat to low, cover, and simmer for 15 minutes.
  9. Stir in long-grain rice and continue cooking for an additional 15-20 minutes until tender.
  10. Stir in lemon juice before serving for zesty brightness.
  11. Garnish with fresh parsley before serving.
