  • 1 cup Greek Yogurt or Whipped Cream Can substitute with coconut yogurt for dairy-free.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Poke holes into each sweet potato with a fork and place them on a baking sheet lined with parchment paper. Roast for 45–55 minutes until fork-tender.
  2. While the sweet potatoes are roasting, heat a skillet over medium heat and add butter to melt. Add diced apples and sauté for 5–7 minutes until soft.
  3. Stir in maple syrup, ground cinnamon, nutmeg, cloves, and salt. Cook for an additional 2 minutes.
  4. Remove sweet potatoes from the oven, slice them open lengthwise, and fill with the spiced apple mixture.
  5. Sprinkle with chopped pecans and dried cranberries. Top with Greek yogurt or whipped cream.
