Preparation Steps
- Preheat your oven to 400°F (200°C). Poke holes into each sweet potato with a fork and place them on a baking sheet lined with parchment paper. Roast for 45–55 minutes until fork-tender.
- While the sweet potatoes are roasting, heat a skillet over medium heat and add butter to melt. Add diced apples and sauté for 5–7 minutes until soft.
- Stir in maple syrup, ground cinnamon, nutmeg, cloves, and salt. Cook for an additional 2 minutes.
- Remove sweet potatoes from the oven, slice them open lengthwise, and fill with the spiced apple mixture.
- Sprinkle with chopped pecans and dried cranberries. Top with Greek yogurt or whipped cream.
