Step-by-Step Instructions for Creamy Turnip Soup
  1. Begin by heating 2 tablespoons of olive oil in a large pot over medium-low heat.
  2. Add the sliced onion, cleaned leek, and chopped carrot to the pot. Sauté for roughly 8 minutes.
  3. Stir in 3 minced garlic cloves and cook for an additional 2 minutes.
  4. Next, add the chopped turnips, potato chunks, nutmeg, coriander, thyme, bay leaf, salt, and black pepper.
  5. Pour in 3 ½ cups of low-salt vegetable broth and bring the mixture to a boil.
  6. Once boiling, reduce the heat to low and cover the pot. Allow the soup to simmer gently for about 15 minutes.
  7. After simmering, remove the pot from heat and let it cool slightly. Blend the soup until smooth.
