  • 1 clove Garlic Clove grated
  • 1 inch Ginger Cube grated
For the Dumplings and Veggies
  • 16 ounces Dumplings frozen veggie dumplings or preferred type
  • 2 bulbs Bok Choy substitute with baby spinach or Swiss chard
  • 1 medium Zucchini or any seasonal vegetable
For Garnishing
  • Sesame Seeds optional
  • Sliced Green Onions optional
  • Cilantro optional
  • Chili Crisp Oil optional

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a spacious baking dish, whisk together the coconut milk, red curry paste, soy sauce, rice vinegar, honey, sesame oil, grated garlic, and ginger until well-mixed.
  3. If desired, stir in ¼ cup of water for a brothier texture.
  4. Chop the bok choy and slice the zucchini, then stir these vegetables into the broth mixture.
  5. Carefully lay the frozen dumplings on top of the vegetable and broth mixture.
  6. Cover the baking dish tightly with foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 5-10 minutes until the dumplings are golden and the broth is bubbly.
  8. Garnish with sesame seeds, sliced green onions, and fresh cilantro before serving.
