  • 1 pound Ground Beef or ground turkey/chicken
  • 1 medium Onion chopped; yellow or white preferred
  • 3 cloves Garlic freshly minced
  • 1 can Kidney Beans drained and rinsed
  • 1 can Black Beans drained and rinsed
  • 1 can Diced Tomatoes fire-roasted preferred
  • 2 tablespoons Tomato Paste
  • 2-3 cups Beef Broth or vegetable broth for vegetarian option
Spices
  • 2 tablespoons Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika smoked paprika enhances taste
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper freshly cracked preferred

Method
 

Cooking Steps
  1. In a large skillet over medium heat, brown the ground beef for about 5-7 minutes until fully cooked.
  2. In the same skillet, sauté the chopped onion and minced garlic for 2-3 minutes until soft.
  3. Transfer the browned meat and sautéed onions and garlic into your crockpot.
  4. Stir in the kidney beans, black beans, diced tomatoes, and tomato paste.
  5. Pour in the beef broth and stir to combine.
  6. Sprinkle in the chili powder, cumin, paprika, salt, and black pepper.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  8. After cooking, taste and adjust seasoning if needed; cook uncovered for 30 minutes for a thicker chili if desired.
