For the Potatoes
  • 4 large Potatoes
  • 1 cup Cheddar cheese, shredded
  • 1/4 cup Chives, chopped
  • 1/2 cup Sour cream
For Toppings
  • 1/2 cup Additional cheese for topping
  • 2 tablespoons Butter to drizzle

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork.
  3. Place the potatoes on a baking sheet and bake for about 45 minutes or until tender.
  4. Once cooked, cut them in half and scoop out a bit of the insides.
  5. In a mixing bowl, combine the scooped potato with cheddar cheese, chives, and sour cream.
  6. Fill the potato halves with the mixture and top with additional cheese and a drizzle of butter.
  7. Return to the oven and bake for an additional 10 minutes.
  8. Serve hot, garnished with extra chives if desired.
