Preparation Steps
  1. Chop chicken into bite-sized pieces and season with salt and pepper. Prepare all other ingredients.
  2. Heat pot over medium-high heat, add olive oil, and sauté chicken for 5–7 minutes until golden brown.
  3. Add elbow macaroni and chicken broth, stir, and bring to a boil. Reduce heat and simmer for 8–10 minutes.
  4. Stir in marinara sauce and simmer for an additional 2–3 minutes.
  5. Remove from heat and add mozzarella and Parmesan cheese, stirring until melted and creamy.
  6. Serve warm, garnished with additional marinara and fresh herbs if desired.
