Preparation Steps
- Chop chicken into bite-sized pieces and season with salt and pepper. Prepare all other ingredients.
- Heat pot over medium-high heat, add olive oil, and sauté chicken for 5–7 minutes until golden brown.
- Add elbow macaroni and chicken broth, stir, and bring to a boil. Reduce heat and simmer for 8–10 minutes.
- Stir in marinara sauce and simmer for an additional 2–3 minutes.
- Remove from heat and add mozzarella and Parmesan cheese, stirring until melted and creamy.
- Serve warm, garnished with additional marinara and fresh herbs if desired.
