Preparation Steps
- Rinse the white fish fillets under cold water and pat dry with a paper towel. Cut into bite-sized pieces, season with salt and pepper.
- In a large pot, heat oil over medium heat. Add chopped onion, sauté for 5 minutes until translucent.
- Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
- Stir in diced tomatoes and chopped bell pepper, cook for 5-7 minutes until softened.
- Pour in coconut milk and broth. Stir well and bring to a gentle simmer.
- Add fish sauce, lime juice, and curry powder. Adjust seasoning with salt and pepper.
- Gently add seasoned fish pieces to the pot, cook for approximately 10 minutes or until fish is opaque.
- Stir in chopped spinach or kale, allow to wilt for 2-3 minutes.
- Remove from heat, garnish with fresh cilantro.
