  • 1 Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 1 inch Ginger Fresh, grated.
  • 1 cup Tomatoes Diced.
  • 1 cup Bell Pepper Chopped, choose red or yellow.

Preparation Steps
  1. Rinse the white fish fillets under cold water and pat dry with a paper towel. Cut into bite-sized pieces, season with salt and pepper.
  2. In a large pot, heat oil over medium heat. Add chopped onion, sauté for 5 minutes until translucent.
  3. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  4. Stir in diced tomatoes and chopped bell pepper, cook for 5-7 minutes until softened.
  5. Pour in coconut milk and broth. Stir well and bring to a gentle simmer.
  6. Add fish sauce, lime juice, and curry powder. Adjust seasoning with salt and pepper.
  7. Gently add seasoned fish pieces to the pot, cook for approximately 10 minutes or until fish is opaque.
  8. Stir in chopped spinach or kale, allow to wilt for 2-3 minutes.
  9. Remove from heat, garnish with fresh cilantro.
  10. Serve hot with lime wedges.
