- In a large mixing bowl, combine 1 cup of cottage cheese and 2 tablespoons of unsweetened cocoa powder. Blend until smooth and creamy.
- Add in 2 tablespoons of your preferred natural sweetener, and if using, mix in one scoop of protein powder. Stir thoroughly.
- Add in 2 tablespoons of peanut butter, and optional ingredients like 1 teaspoon of instant espresso powder or peppermint extract. Mix until combined.
- Transfer the batter to the refrigerator and chill for about 15 minutes.
- Remove batter from the refrigerator and roll into bite-sized balls, about 1 inch in diameter.
- Store formed bites in an airtight container. Refrigerate for up to 5 days or freeze for 2-3 weeks.
