  • 2 tablespoons Olive Oil Substitute with coconut oil for a different flavor.
  • 2 cups Sweet Potatoes Can use yams if preferred.
  • 1 cup Carrots Use more or substitute with parsnips.
  • 1 cup Onion Can be replaced with shallots.
  • 2 cloves Garlic Fresh minced is preferable.
For the Liquid
  • 4 cups Vegetable Stock Chicken broth can be used for a non-vegan option.
For Seasoning
  • 1 teaspoon Paprika
  • 1 teaspoon Cinnamon
  • 1 teaspoon Turmeric
  • Salt To taste.
  • Black Pepper To taste.
  • Dried Herbs (Rosemary & Thyme) Optional.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 2 chopped sweet potatoes, 1 diced carrot, 1 diced onion, and 2 minced garlic cloves. Sauté for about 10 minutes until onions are translucent.
  2. Pour in 4 cups of vegetable stock and add spices. Increase heat to bring to a gentle boil, then reduce heat and let it simmer uncovered for 30-40 minutes.
  3. Once the vegetables are tender, blend until smooth using an immersion blender.
  4. Adjust the consistency by adding a splash of water or broth if too thick. Taste and adjust seasoning as needed.
  5. Ladle soup into bowls, garnishing with fresh herbs if desired. Serve alongside crusty bread or salad.
