  • 2 cups Greek Yogurt full-fat for creaminess
  • 2 tablespoons Honey or Maple Syrup adjust to taste or omit
  • 1 teaspoon Vanilla Extract can be swapped with other extracts
For the Toppings
  • ½ cup Dried Goji Berries substitute with dried cranberries if desired
  • 1 cup Mixed Fresh Berries like strawberries or blueberries
  • ½ cup Chopped Almonds or Walnuts or replace with seeds
  • 2 tablespoons Chia Seeds or Flaxseeds optional

Method
 

Preparation Steps
  1. In a large mixing bowl, combine Greek yogurt, honey or maple syrup, and vanilla extract. Stir until smooth and creamy.
  2. Line a baking sheet with parchment paper. Pour the yogurt mixture onto the baking sheet and spread it evenly to about ¼ inch thick.
  3. Evenly sprinkle dried goji berries and mixed fresh berries over the yogurt layer. Press toppings into the yogurt gently.
  4. Transfer the baking sheet to the freezer and allow the yogurt bark to freeze for at least 4 hours or overnight.
  5. Once frozen, remove the baking sheet from the freezer, peel off parchment, and break the yogurt bark into pieces.
  6. Store broken pieces in an airtight container in the freezer for up to two weeks.
