Preparation Steps
- In a large mixing bowl, combine Greek yogurt, honey or maple syrup, and vanilla extract. Stir until smooth and creamy.
- Line a baking sheet with parchment paper. Pour the yogurt mixture onto the baking sheet and spread it evenly to about ¼ inch thick.
- Evenly sprinkle dried goji berries and mixed fresh berries over the yogurt layer. Press toppings into the yogurt gently.
- Transfer the baking sheet to the freezer and allow the yogurt bark to freeze for at least 4 hours or overnight.
- Once frozen, remove the baking sheet from the freezer, peel off parchment, and break the yogurt bark into pieces.
- Store broken pieces in an airtight container in the freezer for up to two weeks.
