- Heat the olive oil in a large pot over medium heat for about 1–2 minutes.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Stir in the pasta and sweet corn, mixing well to coat the pasta.
- Add the water or vegetable broth until it covers the pasta and stir gently.
- Zest and juice the lemon into the pot, then season with salt and pepper.
- Bring to a boil, reduce heat to low, cover, and cook for 10–15 minutes.
- Remove from heat and fold in the ricotta cheese and chopped basil.
- Serve warm, garnished with extra basil if desired.
