Ingredients
  

For the Pasta
  • 8 ounces short pasta any variety
  • 1 cup sweet corn fresh or frozen
For the Creamy Mixture
  • 1 cup ricotta cheese
  • ½ cup fresh basil chopped
For Flavor
  • 2 cloves garlic minced
  • 1 lemon juice and zest
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper

Method
 

Cooking Instructions
  1. Heat the olive oil in a large pot over medium heat for about 1–2 minutes.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the pasta and sweet corn, mixing well to coat the pasta.
  4. Add the water or vegetable broth until it covers the pasta and stir gently.
  5. Zest and juice the lemon into the pot, then season with salt and pepper.
  6. Bring to a boil, reduce heat to low, cover, and cook for 10–15 minutes.
  7. Remove from heat and fold in the ricotta cheese and chopped basil.
  8. Serve warm, garnished with extra basil if desired.
