Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and crush the vanilla wafers into fine crumbs.
  2. Combine crushed wafers with melted unsalted butter and press firmly into the muffin cups.
  3. Bake the crusts for 8-10 minutes until golden, then cool.
  4. Mix softened cream cheese, brown sugar, and vanilla extract until smooth.
  5. Mash overripe bananas and fold into the cream cheese mixture, adding eggs one by one.
  6. Spoon the filling over the cooled crusts, filling about 3/4 full and bake for 20-25 minutes.
  7. Once baked, cool to room temperature, then chill in the refrigerator for at least 2 hours.
  8. Whip the cold cream with powdered sugar until soft peaks form and pipe on top of the cheesecakes.
  9. Garnish with banana slices and crushed wafers just before serving.
